Description
After the devastating fire on January 5, 2020, the restaurants of the Hotel Traube Tonbach were completely destroyed. The urban planning and landscape challenge was to integrate the new building on the small, steep plot into the scattered residential buildings. Inspired by a Black Forest farmstead, three individual houses now form a harmonious ensemble.
Concept and materials:
The façade facing the street is rather closed. Towards the valley, generous glazing and terraces provide a unique view. Natural materials such as the grayed wooden shingles, the rough plaster and the tiled roof look familiar in a rural setting. The granite paving and the clay wall of the outdoor area are continued in the foyer, creating a connection between the inside and outside. The three houses are accessed via the centrally located foyer. Each building houses one of the three restaurants.
The 3-room restaurant, the Schwarzwaldstube, is characterized by its height, the visible wooden supporting structure and the fully glazed gable. The wooden cladding, the large granite slabs and the impressive light object make the room something special. Where the farmhouse parlor once stood, you will now find the 1-star restaurant (the 1789). Small perforated windows, clay plaster walls, oak floors and surrounding benches give the room its cozy atmosphere. The Schatzhauser, the former charcoal-burner's parlor, is reminiscent of the charcoal-burner's guild with its blackened walls and ceilings and dark end-grain wood floor. Not only the view, but also the glazed wine cooler invites you to look around and linger.
On the upper floor, another guest room, the Quartier, offers space for family celebrations and company events. The large sliding windows open up the room towards the valley onto a covered terrace, which invites you to sit and barbecue.
The complex service and kitchen area with all its preparation, supply and disposal rooms extends over two floors and takes up around half of the usable area.
The technical areas of the kitchens and restaurants take up another part of the building. In order to reduce construction heights and distances, a separate technical center was planned for each building.
Energy concept:
The waste heat from the combined heat and power units is used for heating, while the waste heat from the cooling system is used to heat the building's hot water. The ventilation systems are equipped with highly efficient heat recovery systems. A chiller with the refrigerant R1234 and a GWP of less than 1 is used for air conditioning.
